
Creamy Chicken Corn Chowder

Rain. Wind. Wet leaves. Traffic. Homework. Piles. Dog poop. Wet dog feet. Wet dog feet on nice clean carpet. Christmas music before Thanksgiving. Whiny kids who don’t want to do their homework. Whiny mom who doesn’t want to deal.
Time for some thick, creamy, yummy soup. And some Chianti.
Chicken Corn Chowder

Ingredients
1 package boneless/skinless chicken breasts
2 cans low fat cream of chicken soup
2 cans low sodium chicken broth
1 can creamed corn
1 can white corn (drained)
1/2 chopped white onion
3 pinches cumin
pinch Salt & Pepper
splash olive oil
pinch shredded carrots
turkey bacon, sun-dried tomatoes or cubed potatoes (cooked and added separately if you want something more hearty.
Instructions

Season chicken with S&P and dice into cubes.

Saute chicken in some olive oil for a few minutes (but not totally cooked) in a large pot on medium.

Add everything else to the pot and bring to a boil.

Reduce heat and simmer for 30 minutes.

Serve with a monster hunk of fresh sourdough. This soup freezes well!
This is delicious. I made it last night doe Christmas Eve and I seriously want to eat it for breakfast! I think my kids and relatives do too!! Yum!!!
